Einkorn has a subtle, but nutty flavor and is very well known to be gentle for gluten-sensitive souls, due to the difference of gluten protein. Note, it's not a curing spell for gluten-free. 

Due to the unique nature of this wheat, it is worked differently than typical flour and may require some recipe adaptation, but the extra effort is completely worth it for the amazing flavors and textures you get.
